- A good knob of butter
- 6 garlic cloves
- Prawns ( depends how many you are cooking for ) I prefer the grey king prawns !
- 1 white onion
- 6 cherry tomatoes
- Salt and pepper to season
- Parmesan cheese
- Double cream
In a large hot pan melt your butter And toss the prawns in season and cook until they go pink once they are pink remove from pan
Reduce heat and a bit more butter when melted add crushed garlic cherry tomatoes season with a good pinch of salt and pepper once the tomatoes begin to soften add the spinach cook until it starts to wilt
Stir in the double cream and Parmesan bring the pan to a simmer and reduce the heat
Re-add the prawns and stir to mix all the ingredients together once heated remove from heat place on a plate and serve with asparagus or any green veg of your choice
If you don’t want it to be 100 % keto serve with rice or pasta
