This is super quick and easy no fuss supper that’s bursting with flavour !
- Olive oil
- 1 red pepper
- Spring onions
- Mange tout
- Red chilli
- King prawns
- Red Thai curry paste
- 1/2 can coconut milk
- Spinach (optional)
Heat the olive oil in the pan or wok over a high to medium heat , add the monk fish , peppers , spring onions and curry paste .
Stir continuously , pour the coconut milk into the pan and bring to a gentle simmer .
Add the mange tout and continue cooking for another few minutes .
Add the prawns and heat until they turn into the beautiful pink colour or if not using raw king prawns until heated through
Serve with greens or cauliflower rice , I chose spinach tonight but the choice is yours !
