Honestly we never buy duck apart from the takeaway which then is very rare, so when I saw these beauties behind the butchers counter I thought hmmm let’s give it a go …… between you and me I’m so glad I did !! Don’t be put off thinking duck is tricky to cook it really isn’t , I promise you
- Duck breast (skin on )
- Garlic oil
- Shredded green cabbage
- Spring onion
- Red pepper ( for colour )
- Tender stem broccoli
- Peas (optional )
- Soy sauce
You need 2 pans 1 to cook the duck breast 1 to stir fry your greens
So season your duck with a little salt and I mean a little , then score the fat on the duck breast just lightly try not to cut through the duck , I was a little heavy handed (as per usual )
Place a knob of butter in the pan and fry the duck breast skin side down ! Now duck is a bit like steak it’s all down to personal preference if you like it a little pink don’t cook it as long once you have cooked it skin side down turn over and leave it to cook on the other side .
In your other pan heat some of the garlic oil , if you don’t have garlic oil don’t worry either add some crushed garlic to olive oil or just use plain olive oil , not a problem !
Add the broccoli peppers shredded cabbage and stir fry until it softens add spring onion and peas if using and then keep stir frying , once you have sir fried the veg add some soy sauce and give it a good stir
Remove the duck breast from the pan and leave to rest for a few minutes
Spoon the stir fried veg onto your plate pop the duck on top and enjoy 😊
