Chimichurri

Sauce

This is a great sauce that can be used over fish steak ,chicken and vegetables

  • 1/4 of a cup Olive oil (invest in a decent one )
  • 1 Shallots
  • Fresh parsley
  • Lemon juice
  • 3 tablespoons red wine vinegar
  • 4 Garlic cloves
  • 2 teaspoon Crushed chillies ( adjust accordingly)
  • Salt & black pepper

Chop shallot garlic cloves parsley into small fine pieces on a chopping board ( alternatively you can use a food processor ) I haven’t got one !

Pour the olive oil red wine vinegar chillies and lemon juice in a bowl and mix

Add the dried ingredients and give it a good whisk season to taste

And enjoy ! It tastes even better the next day so double up on the ingredients and make enough for the day after as a salad dressing

Pork steaks with peppercorn sauce

Midweek supper

Pork loin steaks with peppercorn sauce if you don’t like pork swap for chicken or as a treat steak !

  • Pork loin steaks
  • Butter
  • Mushrooms
  • White onion
  • Spinach
  • For the peppercorn sauce
  • Double cream
  • Beef stock
  • Salt
  • Peppercorns

Pre heat pan with butter and cook the pork chops until golden brown

Remove from pan and keep warm in a low heated oven

In a separate pan fry mushrooms onions until they soften keep on a low heat

In the pan you cooked your chops pour in 1/4 of a pot of double cream add the same quantity of beef stock season with salt and pepper and add the peppercorns

Simmer for 5-7 minutes

Add the mushrooms onions and spinach until wilted to the peppercorn sauce stir and Serve over the pork chops

Serve with tender stem broccoli or a vegetable of your choice

For those who don’t want to do the peppercorn sauce supermarket brands are perfectly fine

Kreme keto prawns

Ideal for midweek or a Saturday night treat !!

  • A good knob of butter
  • 6 garlic cloves
  • Prawns ( depends how many you are cooking for ) I prefer the grey king prawns !
  • 1 white onion
  • 6 cherry tomatoes
  • Salt and pepper to season
  • Spinach
  • Parmesan cheese
  • Double cream

In a large hot pan melt your butter And toss the prawns in season and cook until they go pink once they are pink remove from pan

Reduce heat and a bit more butter when melted add crushed garlic cherry tomatoes season with a good pinch of salt and pepper once the tomatoes begin to soften add the spinach cook until it starts to wilt

Stir in the double cream and Parmesan bring the pan to a simmer and reduce the heat

Re-add the prawns and stir to mix all the ingredients together once heated remove from heat place on a plate and serve with asparagus or any green veg of your choice

If you don’t want it to be 100 % keto serve with rice or pasta

Minted lamb kebabs !!

These are a huge hit with the family and are great when you are in a hurry with very little prep time …… so we are a family of 4 so you adjust your serving sizes depending on how many you are cooking for ….

  • Minted lamb kebabs
  • 1 yellow pepper
  • 1 red pepper
  • 2 green pepper
  • 1 red onion
  • 6 garlic cloves
  • 1/2 block of feta cheese
  • Olive oil
  • Salt & black pepper for seasoning

Start by preheating oven to a moderate heat , place kebabs on a flat tray , grilling or bbq is perfectly fine too .

Roughly chop the peppers and place on baking tray quarter the onion and scatter amongst the peppers place the garlic bulbs whole in and amongst the mixed veg season with salt and pepper and drizzle with olive oil

Place in the oven with the kebabs and cook until soft and starting to brown

Once the kebabs are cooked and the veg place on a plate and scatter the feta cheese on top and enjoy
